Preparation

Mix for 2 minutes on first speed and then for 9 minutes on the second speed. Dough temperature should be 230 ºC. Give the dough 5 minutes rest, add margarine and laminate 3 times single book turns. Pin out and use as required.

Danish recipe:

1 kg Danish Concentrate

  • 1 kg flour
  • 65 dcl water
  • 10 dkg yeast
  • 1 egg
  • 67,5 dkg puff pastry margarine
